This meat is the toughest part of the animal and is often described as tough and fibrous. It is considered to be inferior quality meat as it is difficult to cook. However, these same qualities make it an excellent choice for mincing and it is typically used in the preparation of mutton keema. Raan is most famously used for the making of the roast of mutton leg where this tough meat made tender and succulent.
